Toasted Quinoa Salad

Ingredients

Never let your salads get boring. This tart salad incorporates quinoa and apple to support your greens with the nutrition and flavor of fruit and whole grain.
Salad Ingredients
2/3 c. quinoa, cooked
1 lb. sweet potatoes, peeled, cubed and roasted
1 T. olive oil
1/4 t. salt
1/4 t. pepper
2 lg. apples, diced
8 c. baby greens
1/4 med. red onion, sliced
Dressing Ingredients
1/4 c. apple cider vinegar
1 t. Dijon mustard
1/4 c. extra virgin olive oil
pinch of salt and pepper
Toasted Quinoa Salad

Directions

1. Preheat the oven to 400 degrees F. Spread the cooked quinoa on a baking sheet and toast for 3-5 minutes.
2. Whisk together the dressing ingredients. Combine the salad ingredients and toss with dressing to coat.
3. Serve immediately.
