Honey-Ginger Cocktail Syrup

Ingredients

For an easy cocktail, combine 1 ounce of honey-ginger syrup with 2 ounces bourbon and 1 ounce lemon juice. Add ice and top with a splash of ginger beer.
1 1/2 cups water
1 cup honey
1 5" piece ginger, peeled and sliced thin
2 tsp. black peppercorns

Directions

1. Combine all ingredients in a medium saucepan and bring to a simmer over medium-high heat. Reduce heat to medium-low and simmer, stirring occasionally, until syrup is slightly thickened, about 15 minutes. Remove from heat and cool to room temperature, about 1 hour.
2. Strain into an airtight container (discard solids) and refrigerate for up to 1 month.
