Avocado-Tomatillo Dip

Ingredients

For a dip with more kick, leave the seeds in the jalapeno.
1 lb. tomatillos, husked, rinsed well, and quartered
Salt
4 scallions, coarsely chopped
1 cup packed cilantro leaves
1 jalapeno, seeded and quartered
2 ripe avocados, peeled, pitted, and coarsely chopped
1 Tbsp. lime juice
Avocado-Tomatillo Dip

Directions

1. Pulse tomatillos and 1 teaspoon salt in a food processor until finely chopped, about 10 times, then drain in a fine-mesh strainer at least 10 minutes and up to 1 hour.
2. Pulse scallions, cilantro, and jalapeno in food processor until finely chopped, scraping sides of bowl as needed, 10 to 15 times. Transfer to a medium bowl and gently stir in avocados, tomatillos, lime juice, and 1 teaspoon salt. Serve immediately or cover and refrigerate up to 1 day; stir before serving.
