Crispy Cornmeal Waffles

Ingredients

If you don't have buttermilk, stir together 1 3/4 cups of milk and 1 1/2 tablespoons white vinegar or lemon juice, then let sit 5 minutes.
1 3/4 cups buttermilk
2 large eggs
4 Tbsp. unsalted butter, melted
1 1/2 cups (7 1/2 oz.) all-purpose flour
1/2 cup yellow cornmeal
4 tsp. sugar
2 tsp. baking powder
1 tsp. baking soda
3/4 tsp. salt

Directions

1. Heat oven to 200 degrees. Set a wire rack in a rimmed baking sheet and place in oven.
2. Whisk buttermilk and eggs in a medium bowl until blended. While whisking, slowly add in melted butter, then set aside. In a large bowl, whisk remaining ingredients together, then stir in butter mixture until just combined (some lumps are fine). Let sit 10 minutes.
3. Meanwhile, heat a waffle iron to high for 10 minutes. Following manufacturer's instructions, cook waffles in greased waffle iron until crisp and brown, transferring them to wire rack in oven as you go.
