Crunchy Broccoli and Brussels Sprout Slaw

Ingredients

1/2 cup mayonnaise
2 Tbsp. apple cider vinegar
1 Tbsp. Dijon mustard
1 tsp. sugar
1/2 tsp. salt
1/2 tsp. black pepper
1 head broccoli, florets broken into small pieces, stalk thinly sliced
1/2 lb. Brussels sprouts, trimmed and shredded
3 cups shredded red or green cabbage
4 scallions, sliced
1/2 cup roasted pepitas
Crunchy Broccoli and Brussels Sprout Slaw

Directions

1. In a large bowl, whisk mayonnaise, apple cider vinegar, mustard, sugar, salt, and pepper until combined.
2. Add broccoli, Brussels sprouts, cabbage, scallions, and pepitas to bowl with dressing and toss until well coated.
