Orzo and Veggie Soup

1 Tbsp. olive oil
1 1/4 cups Hannaford Mirepoix or 3/4 cup Hannaford Diced Yellow Onion
1/4 tsp. Nature's Promise Italian Seasoning
3 cups Nature's Promise Organic Baby Kale
8 oz. cooked fingerling or yellow potatoes, cut into bite-size pieces
1 cup cooked orzo
3 cups Hannaford No Salt Added 99% Fat Free Chicken Stock
1 cup Hannaford No Salt Added Tomato Sauce
1 cup water
Salt and pepper
1/3 cup Taste of Inspirations Reduced-Fat Crumbled Feta Cheese
Orzo and Veggie Soup


1. Heat oil in a large saucepan over medium-high until shimmering. Add mirepoix and Italian seasoning and cook, stirring occasionally, until onions are just softened, about 5 minutes.
2. Add all remaining ingredients except for feta, then cover and bring to a simmer. Reduce heat to low and simmer gently until soup is slightly thickened, about 10 minutes.
3. Season with salt and pepper to taste, then divide among bowls and sprinkle with feta before serving.
