Turkey Sloppy Joes

Ingredients

2 Tbsp. vegetable oil
1 lb. 85% lean ground turkey
1 large onion, chopped
1 red bell pepper, seeded and chopped
1 small zucchini, coarsely grated and squeezed dry (about 1 packed cup)
1 (15-oz.) can no salt added tomato sauce
1/4 cup water
2 Tbsp. brown sugar
2 tsp. apple cider vinegar
1 1/2 tsp. yellow mustard
1/2 tsp. garlic powder
Salt and pepper
6 hamburger buns, warmed

Directions

1. Heat oil in a large high-sided skillet or Dutch oven over medium-high until shimmering. Add turkey and cook, stirring and breaking meat into small pieces, until no longer pink, about 5 minutes.
2. Add onion, bell pepper, and zucchini and cook, stirring often, until vegetables begin to soften, about 5 more minutes.
3. Add tomato sauce and water, then stir in brown sugar, vinegar, mustard, garlic powder, and 3/4 teaspoon salt and bring to a simmer. Reduce heat to low, cover, and simmer until mixture is slightly thickened, about 10 minutes.
4. Season with salt and pepper to taste, then serve on warmed hamburger buns.
