Gingerbread Kettle Corn

Ingredients

3 Tbsp. brown sugar
1 1/2 Tbsp. water
1/2 tsp. ground cinnamon
1/2 tsp. ground ginger
1/2 tsp. table salt
1/4 tsp. ground cloves
1/3 cup popcorn kernels
3 Tbsp. vegetable oil

Directions

1. In a small saucepan, combine brown sugar, water, cinnamon, ginger, salt, and cloves. Bring to a boil over medium, stirring to dissolve sugar, then set aside.
2. In a large, heavy-bottomed pot with a tight-fitting lid, combine popcorn kernels and vegetable oil. Cover and cook over medium-high heat, shaking pot constantly, until kernels begin to pop. Continue to cook, shaking pot constantly, until 2 to 3 seconds pass between pops. Remove pot from heat and wait 10 seconds before removing lid, then immediately pour warm syrup over popcorn. Cover pot and shake vigorously until popcorn is evenly coated.
3. Transfer to a large bowl and let cool at least 5 minutes before serving.
