Air Fryer Corn Ribs

Ingredients

Corn cobs get sliced into easy-to-hold "ribs" for an easy summer side. Barbecue sauce and spices add extra flavor and heat.
2 ears corn, husked
1 Tbsp. olive oil
1/4 cup barbecue sauce
1/2 tsp. ground cumin
1/2 tsp. cayenne pepper
1 Tbsp. vegan mayonnaise, to serve (optional)
Chopped cilantro, chopped green onions and lime wedges, to serve (optional)

Directions

Preheat air fryer to 400 degrees F. With a large sharp knife, slice corncobs in half lengthwise. Cut each half lengthwise again to get 8 sets of "ribs".
In a small bowl, combine oil, barbecue sauce, cumin and cayenne. Brush sauce all over corn. Air fry until corn is tender, 10 minutes, working in batches if needed.
Transfer corn to a platter and drizzle with vegan mayonnaise, if desired. Garnish with cilantro, green onions and lime wedges, if desired. Serve immediately.
