One-Bowl Apple Cake with Honey Glaze

Ingredients

This one-bowl cake makes cleanup super simple while letting peak-season fall apples shine. Serve it at your Rosh Hashanah gathering for a special sweet dessert.
1 lb. apples (around 3 apples)
3 large eggs, room temperature
1 cup granulated sugar
1/2 cup walnuts and/or pecans, chopped
3/4 cup canola oil
2 tsp. vanilla extract
3 cups all-purpose flour, plus more for dusting
2 1/2 tsp. apple pie spice or cinnamon, divided
2 tsp. baking soda
1/2 tsp. salt
3/4 cup confectioners' sugar
2 Tbsp. honey
1 Tbsp. low-fat milk
One-Bowl Apple Cake with Honey Glaze

Directions

Preheat oven to 325 degrees F. Grease and flour a 10" Bundt pan. Peel apples. Using a box grater, grate apples into a large bowl for around 4 cups of grated apple. Add eggs, granulated sugar, nuts, oil and vanilla. Mix well to combine.
To bowl, add flour, 2 teaspoons apple pie spice, baking soda and salt. Stir to combine. Pour into prepared pan. Bake 40 to 50 minutes, until toothpick inserted into center comes out clean. Let cool 15 minutes before glazing.
To make glaze, in a medium bowl, whisk together confectioners' sugar, honey, remaining ? teaspoon apple pie spice and milk until smooth. Drizzle glaze over top.
