French Onion Meatballs

Ingredients

Classic French onion soup inspires this cheesy five-ingredient dinner. Store-bought frozen meatballs help speed up the cooking time and make it weeknight-easy.
3 Tbsp. olive oil
2 yellow onions, thinly sliced
1 (16-oz.) package Nature's Promise Italian Style Meatballs, thawed
1/2 (10.5-oz.) can beef consomme
1 cup grated Gruyere cheese

Directions

In a 10" oven-safe skillet, heat oil over medium-high. Add onions and season with salt and pepper. Cook until onions are browned and caramelized, 20 to 25 minutes, stirring occasionally.
When onions are almost caramelized, add meatballs to a microwave-safe bowl. Microwave meatballs on high until warmed through, 3 to 4 minutes.
Preheat broiler on high. To skillet, add consomme and meatballs, and bring to a simmer. Season with salt and pepper. Sprinkle cheese on top. Broil until cheese has melted and liquid is bubbling, 2 to 3 minutes.
Tip: Serve with warm French bread or over buttered egg noodles.
