Apple Cinnamon Cobbler

Ingredients

2 teaspoon Cinnamon, ground
2 tablespoon Cornstarch
1/4 cup Sugar
1 cup Water
4 medium-size baking appples (such as Ida Red or Cortland), peeled and sliced (4 cups)
1 cup Soft whole grain wheat pastry flour
1 teaspoon Baking powder
1/4 cup Canola oil
1 tablespoon Honey
1/2 cup Cultured low fat buttermilk

Directions

1. Preheat oven to 375 degrees F. Lightly spray a 9 or 10-inch pie plate or casserole
2. In a large saucepan whisk together cinnamon, cornstarch, and sugar. Whisk in water. Stir in aplles and cook, over medium heat, until apples are just barely soft and mixture is thickened, about 8 minutes. Pour apple mixture into prepared dish. Set aside.
3. In a medium bowl, combine flour and baking powder. Add oil, honey, and buttermilk. Stir just until batter is moist. Add additional buttermilk if mixture seems overly dry.
4. Drop biscuit dough by tablespoons on top of apples. Bake for 20 minutes or until golden brown. Serve warm.
