Cucumber Watercress Sandwiches

1/4 cup Herb and garlic soft spreadable cheese, 5.2 ounce package
1/4 cup Plain yogurt, non fat
1 lb french bread
1 cup Watercress, fresh, washed, dried
1/2 each Cucumber,peeled, seeded, diced
Cucumber Watercress Sandwiches


1. In a small bowl, mix cheese and yogurt until smooth. (May be prepared up to 3days in advance and refrigerated in an airtight container.) Slice ends off baguetteand reserve for another use. Slice remaining baguette at an angle into 24 slices. Spread each slice with 1 tsp. of the cheese mixture.
2. Place a few watercress leaves on top of the cheese spread on each slice. Slice the cucumber into 48 very thin slices and place 2 slices of cucumber on each sandwich. Transfer to a platter and serve immediately.
