Lighter Blue Cheese Mashed Potatoes

Ingredients

These tangy, earthy potatoes are wonderful with steak. The secret ingredient is salish, a smoked sea salt. Recipe may be halved.
3 lbs. Yukon Gold potatoes, peeled and cut into 1-inch cubes
1 clove garlic, minced
1/3 cup Inspirations Real Blue Cheese Salad Dressing
1/4 cup fat-free sour cream
1/2 tsp. fresh minced rosemary or 1/4 tsp. dried
1/4 tsp. sea salt, or to taste
1/4 tsp. freshly ground black pepper
1/4 cup crumbled blue cheese, divided
1 Tbsp. chopped fresh parsley
Lighter Blue Cheese Mashed Potatoes

Directions

1. Place potatoes in a large saucepan and cover with cold water by 1 inch. Bringto a boil over high heat, then lower to medium high and cook until potatoes are very tender, about 20 minutes. Drain well.
2. Return potatoes to pan. Mash until smooth with a potato masher or large fork (don't puree in a food processor, as that can make potatoes gummy). Add garlic, blue cheese dressing, sour cream, rosemary, salt, pepper, and 2 Tbsp. of the blue cheese. Mix well to combine.
3. Transfer mashed potatoes to a serving bowl. Garnish with remaining 2 Tbsp. blue cheese and parsley. Serve warm
