Quick Finish for Truffles

Ingredients

Traditionally, truffles are rolled in cocoa, making them resemble their mushroom namesake. You can use sweetened or unsweetened cocoa, or confectioners' sugar, with spices or coffee added for flavor, if desired.
1/2 cup Dutch processed unsweetened cocoa powder, sifted, divided
1/4 teaspoon Cinnamon, ground
1/2 teaspoon instant espresso powder

Directions

1. Place cocoa or confectioners' sugar in a small bowl. If desired, stir in cinnamon, espresso powder, or both.
2. Remove truffles from freezer. Roll a few at a time in cocoa or confectioners' sugar. Serve immediately, or place in an airtight container and store in fridge for up to one week or freezer for up to one month.
