Turkey Vegetable Hash

Ingredients

1 Tbsp. canola oil
1 medium onion, diced
3 cups cooked stuffing
2 cups cooked vegetables such as broccoli, carrots, or parsnips
4 cups diced turkey cooked turkey( white or dark meat, or both)
2 Tbsp. chopped fresh thyme (or 2 tsp. dried)
2 Tbsp. chopped fresh parsley
4 scallions, thinly sliced
1/4 tsp. salt, or to taste
1/4 tsp. freshly ground black pepper
3/4 cup prepared cranberry sauce (optional)

Directions

1. Heat oil in a large nonstick skillet over medium-high heat. Cook onion for 5 minutes, or until lightly browned and soft. Add stuffing, vegetables, and turkey, and press in an even layer. Cook, stirring occasionally, until browned and crisp throughout, about 10 minutes.
2. Stir in thyme, parsley, scallions, salt, and pepper. Serve immediately, with cranberry sauce on the side, if desired.
