Oven Roasted Sausage with Sweet Potatoes and Grapes

Ingredients: Add ingredients to List

3 to 4 lb. orange-fleshed sweet potatoes, scrubbed or peeled and cut into 1-inch cubes (6 medium or 3 large)
1 (1-lb.) package sweet Italian turkey sausage, each link cut in half lengthwise and then into 1-inch slices
1 bunch seedless grapes, green, red, or a mix (about 1 1/4 lb.)
1/2 to 1 cup Hannaford Balsamic Vinaigrette

directions:

1. Preheat oven to 400 degrees F. Line two baking sheets with foil and spray with cooking spray. Set aside.
2. In a large bowl combine sweet potatoes, sausage, and grapes and mix with your hands until well combined. Pour half the Balsamic Vinaigrette over bowl and mix together well, adding more as needed until sausage mixture is well coated with dressing. (You don't want it dripping, so add slowly.)
3. Pour mixture into the two pans. Bake at 400 degrees F for 30 to 35 minutes. After 15 minutes, stir to turn mixture over so it will caramelize evenly. Dish is done when sweet potatoes can be easily pierced with a fork. Serve warm with a green salad. (Salad not included in nutritional analysis).

Rated 5 out of 5 by from Delicious! I was looking for a different recipe and accidentally stumbled across this one. I'm so glad I did! I used 1.5 sweet potatoes, 12 oz of Hannaford Sweet Apple Chicken Sausage, about 1/2# (if not more# of grapes, and about 1/4 cup of Newman's Balsamic Vinaigrette #I add about a tablespoon of maple syrup to my bottle). I was skeptical when I put it in the oven. After 15 minutes, I stirred/flipped it all around. Put it back for another 15 minutes. Perfection. Completely carmelized. Slightly charred. I would never have thought this recipe would be good but I'm making it again tonight.

Rated 5 out of 5 by from Never imagined using these together = DELICIOUS! This was an unexpectedly, delicious dish! My entire family, including my 2 year old daughter absolutely loves this dish and it is super easy to make. I always keep these ingredient on hand as it's a quick weeknight meal!
