Lemon Chicken Stir Fry

Lemon Chicken Stir Fry
1/2 cup Vegetable broth
1/4 cup Fresh lemon juice
1 tablespoon Cornstarch
2 teaspoon Apple juice
2 teaspoon Soy Sauce, light
1 teaspoon Chili sauce
1 teaspoon Instant chicken bouillon granule
2 tablespoon Vegetable oil
1 lb Boneless, skinless chicken breasts, cut in strips
2 each Fresh garlic cloves, crushed
2 tablespoon Equal

directions:

1. For lemon sauce, in small bowl, mix the vegetable broth or water, lemon juice, cornstarch, apple juice or sherry, soy sauce, chili sauce, and bouillon cube or granules until smooth. Set aside.
2. Heat oil in a wok or frying pan over medium heat. Cook and stir chicken and garlic until chicken is no longer oink, about 10 minutes. Remove from pan; keep warm.
3. Add vegetables. Cook and stir about 3 minutes or until heated through.
4. Return chicken to pan, add lemon sauce until sauce is thickened and bubbling. Stir in equal. Serve over rice, if desired.
