Turkey Vegetable Hash

Cook Time: 10 minutes

Ingredients: Add ingredients to List

1 tablespoon canola oil
1 Medium onion, diced
3 cups cooked stuffing mix
2 cups mixed vegetables such as broccoli, carrots, or parsnips
16 oz roasted turkey meat white and/or dark meat diced (about 4 cups)
2 tablespoons Fresh thyme, chopped (or 2 tsp. dried)
2 tablespoons Chopped fresh parsley
4 Scallions, thinly sliced
1/4 teaspoon salt or to taste
1/4 teaspoon Black pepper, freshly ground
3/4 cup prepared cranberry sauce (optional)

directions:

1. Heat oil in a large nonstick skillet over medium-high heat. Cook onion for 5 minutes, or until lightly browned and soft. Add stuffing, vegetables, and turkey, and press in an even layer. Cook, stirring occasionally, until browned and crisp throughout, about 10 minutes.
2. Stir in thyme, parsley, scallions, salt, and pepper. Serve immediately, with cranberry sauce on the side, if desired.
