Quick-Pickled Vegetables

Get Ready

Servings: Makes 1 1/4 cups

Prep Time: 5 minutes

Cook Time: 5 minutes

Ingredients: Add ingredients to List

1 large carrot, sliced thin
1/2 red onion, sliced thin
3/4 cup rice vinegar
3/4 cup water
1 tablespoon sugar
2 teaspoons kosher salt

directions:

1. Combine carrot and onion in a medium heatproof bowl.
2. Bring remaining ingredients to a boil in a small saucepan and simmer until sugar is dissolved. Pour over vegetables and let cool to room temperature before using, about 20 minutes.
