Transform chicken, rigatoni or penne pasta, diced tomatoes, and baby spinach into a delicious Tuscan-inspired meal that the whole family will love. Just add oil, heavy cream, and parmesan cheese to create a bright yet creamy blend of Mediterranean-style herbs and flavors, featuring tomato, garlic, and basil. Feel free to get creative by substituting your favorite pasta shape in place of rigatoni or penne.

Creamy Tuscan Chicken & Pasta. Prep Time: 10 minutes. Cook Time: 20 minutes. Makes 8 servings. You Will Need: 1 pkg. McCormick Seasoning Mix. 2 cups rigatoni or penne pasta. 1 tbsp. oil. 1 lb. boneless chicken breasts, cut into strips. 1 can (14 1/2 oz.) petite diced tomatoes, undrained. 1 cup heavy cream or half-and-half. 1/4 cup grated Parmesan cheese. 2 cups baby spinach leaves. Directions: 1. Cook pasta as directed on package. Drain well. 2. Meanwhile, heat oil in large skillet on medium-high heat. Add chicken; cook and stir 5 minutes or until browned and cooked through. Remove from skillet. 3. Add tomatoes, cream, Parmesan cheese and Seasoning Mix to skillet, stirring to mix well. Bring to gentle boil, whisking constantly until well blended. Reduce heat to low; simmer 5 minutes. Return chicken to skillet. Stir in pasta and spinach. Cook 2 minutes longer, just until spinach is wilted. Sprinkle with additional Parmesan cheese to serve, if desired. Kitchen Tips: Try any variety of diced tomatoes, such as fire-roasted or no salt added. Substitute your favorite pasta shape in place of rigatoni or penne. Try with chopped kale instead of spinach.
