Rated 5 out of 5 by from I'm hooked!! I tried this on a whim, looking to expand my vegetable favorites list, and I LOVED it! The vegetable is great nutritionally, low-carb in relation to almost all other root vegetables, and once peeled (peel is toxic!!) is 100% edible. The texture is firm but not hard, crunchy but cuts easily, and the taste is sort of like a cross between a cucumber and a mild apple. They're juicy and don't oxidize (turn dark) when cut so they're great in salads, or as I prefer, raw .
