"Tarragon has a really bright flavor that works well with some of those brinier, super rich seafoods like steamed clams and mussels," says Jillian Murphy, blogger at jillcooks.com, who provided this recipe for fresh.
1 stick unsalted butter, softened
2 Tbsp. chopped fresh tarragon
2 garlic cloves, minced
Salt and pepper

directions:

1. Mash butter, tarragon, and garlic in a small bowl until blended. Season with salt and pepper to taste.
2. To turn into an easy-to-slice log, transfer to the center of a sheet of plastic and wrap butter, twisting ends of plastic to tighten. Chill until firm, about 1 hour.
