2 very ripe bananas
3/4 cup quick-cooking oats
1/4 cup chunky peanut butter


1. Heat oven to 350 degrees. In a medium bowl, mash bananas with a fork until mostly smooth. Add oats and peanut butter; mix well to combine.
2. Portion dough (about 2 tablespoons each) onto a parchment-lined baking sheet. Flatten dough into discs with your palm and bake until cookies are firm, about 15 minutes.

Rated 5 out of 5 by from Fantastic Recipe This recipe is simple, amazing, affordable and true to recipe. I was able to get all supplies for around $5 (excluding the honey I added in, about 1T). I made this at work with my clients and they all loved them. I also made them at home with my toddler and we added in chocolate chips. My daughter enjoyed mashing the bananas and adding in the measured oats. It is a super reliable recipe and easy to add in additions such as chocolate chips, raisins, dates, seeds and so on. Will definitely make these over and over again!

Rated 5 out of 5 by from Amazing! These breakfast cookies are amazing. They are easy, quick to make, and healthy. They are a fast breakfast in the morning and they will hold you over until lunch. If you don't have very ripe bananas, just put two bananas in the freezer for a couple of hours, then thaw, and they will be soft enough for this recipe. If you like something more sweet in the morning, I added two tablespoons of raw honey, and a pinch of salt. Well done Hannaford!
