Ingredients
1 Tbsp. tahini
1 Tbsp. lemon juice
1 Tbsp. water
3/4 cup cooked quinoa
1/4 cup chickpeas
1/2 cup roasted cauliflower, chopped
1/4 cup chopped apple
1 Tbsp. chopped roasted almonds
1 tsp. fresh cilantro leaves

directions
1. In a small bowl, whisk tahini, lemon juice, and water until smooth. In a serving bowl, mix together quinoa and chickpeas until combined. Top with cauliflower, apple, almonds, and cilantro. Drizzle with tahini mixture before serving.
