Green "Swamp" Salad
Ingredients
You can refrigerate the dressing for up to 5 days.
1/4 cup extra-virgin olive oil
2 Tbsp. water
2 Tbsp. lemon juice
1 small garlic clove, chopped
1/4 tsp. salt
1/4 cup roasted pepitas
2 heads romaine lettuce, torn into bite-sized pieces
1 English cucumber, sliced thin
4 oz. green beans, ends trimmed
2 avocados, peeled, pitted, and diced into 1/2" pieces

directions
1. To make the dressing, puree oil, water, lemon juice, garlic, and salt in a blender until combined. Add pepitas and blend until they are just chopped; set aside until ready to use.
2. In a large bowl, combine lettuce, cucumber, green beans, and avocados and toss with dressing to combine.
