Ingredients
2 Tbsp. apple cider vinegar
2 tsp. Dijon mustard
1 tsp. honey
1/2 tsp. minced garlic
3 Tbsp. extra-virgin olive oil
1 lb. Brussels sprouts, trimmed and sliced very thin with a mandolin
1 apple, halved, cored, and sliced very thin with a mandolin
1/2 cup grated pecorino romano cheese, plus more for serving
1/4 cup chopped, toasted hazelnuts or walnuts

directions
1. In a large bowl, whisk vinegar, mustard, honey, and garlic until combined. While whisking, slowly drizzle oil into mixture until smooth.
2. Add shaved Brussels sprouts, apple, cheese, and hazelnuts and toss to combine. Divide mixture into bowls and sprinkle with more cheese before serving.
