Skillet Chicken Parm for Two
Ingredients
2 thin-sliced boneless, skinless chicken breasts
Salt and pepper
1/4 tsp. garlic powder
1/4 tsp. Italian seasoning
1 tsp. olive oil
1 3/4 cups water
1 1/4 cups Taste of Inspirations Marinara Pasta Sauce
1 cup Hannaford Mini Penne or other short pasta shape
1/2 cup Hannaford Italian Seasoned Croutons, coarsely crushed
2 Tbsp. grated Parmesan cheese
1/4 cup torn fresh mozzarella
Torn fresh basil, for serving

Skillet Chicken Parm for Two

Skillet Chicken Parm for Two

directions
1. Pat chicken dry and season with salt and pepper, then sprinkle with garlic powder and Italian seasoning.
2. Heat oil in a medium oven-safe skillet over medium-high until shimmering. Add chicken and cook until golden brown and cooked through, about 4 minutes per side; transfer to a plate.
3. Remove skillet from heat and carefully add water, pasta sauce, and a big pinch of salt, then bring to a simmer over medium-high. Stir in pasta and cook, stirring frequently, until sauce has thickened and pasta is al dente, about 8 minutes. Meanwhile, place a rack in uppermost part of oven and heat broiler.
4. Nestle chicken into pasta, then sprinkle croutons and Parmesan evenly over top of skillet. Scatter mozzarella over chicken, then broil until cheese is bubbling and lightly browned, about 5 minutes. Sprinkle with basil and serve, using caution as handle will be very hot.
