Tender Herb Salad
Ingredients
2 Tbsp. extra-virgin olive oil
1 Tbsp. lemon juice
1 tsp. honey
Salt and pepper
4 cups torn baby lettuce (about 4 oz.)
1 cup coarsely chopped tender herbs (parsley, basil, dill, mint, tarragon, and/or cilantro)
1/4 cup shaved Parmesan cheese
3 Tbsp. toasted sunflower seeds

directions
1. In a medium bowl, whisk oil, lemon juice, honey, and a pinch each of salt and pepper until blended. Add lettuce and herbs and toss until coated with dressing.
2. Divide salad among plates and sprinkle with Parmesan and sunflower seeds.
