Pumpkin Seed Party Favors

While you're carving your pumpkins, be sure to save the seeds. They make a great healthy snack. You can vary this basic recipe by adding your choice of spices.

  1. Preheat the oven to 250 degrees.
  2. Line a baking sheet with foil and coat with cooking spray.
  3. Separate the seeds from the stringy parts of the pumpkin (any strings remaining on the seeds will bake off).
  4. Spread seeds over baking sheet in single layer and sprinkle with salt.
  5. Bake 10-15 minutes. Stir and continue baking 10-15 minutes more, until golden brown.
  6. Let cool for 5 minutes and enjoy.
