Air Fryer Mini Meat Loaves, Green Beans and Sweet Potato Fries
Ingredients
Everything cooks in the air fryer in this quick and simple dinner. This helps the mini meat loaves stay juicy inside while getting crispy on the outside.
2 medium sweet potatoes, peeled
2 Tbsp. olive oil, divided
1 (10-oz.) bag Nature's Promise Organic Green Beans, trimmed
1/3 + 1/4 cup barbecue sauce, divided
1/4 cup bread crumbs
1/2 yellow onion, finely chopped
1 tsp. garlic powder
1 tsp. garlic powder
1 lb. lean ground beef

Preheat air fryer to 400 degrees F. Slice sweet potatoes into fries. To a medium bowl, add potatoes and 1 tablespoon oil. Season with salt and pepper. Toss to combine. In batches if necessary, add potatoes to air fryer basket. Close and cook 10 minutes. Shake air fryer basket and continue cooking sweet potatoes another 10 minutes, until crisp and deep golden. Transfer to a platter. Cover with foil to keep warm.
While potatoes cook, to same medium bowl, add green beans and remaining 1 tablespoon oil. Season with salt and pepper. Toss to combine. Set aside. In a large bowl, combine 1/3 cup barbecue sauce, bread crumbs, onion and garlic powder. Add beef and mix to combine. Shape into 4 (about 3 1/2") mini loaves.
Coat bottom of air fryer basket with cooking spray. Place meat loaves into air fryer and coat tops with cooking spray. Cook until loaves are crispy on the outside and internal temperature reaches 160 degrees F, 10 to 12 minutes.
Transfer meat loaves to platter and spoon remaining 1/4 cup barbecue sauce over meat. Cover and let stand 10 minutes. Place green beans into air fryer basket and cook 10 minutes, shaking basket halfway through, until crisp and tender. Transfer to platter. Serve with meat loaves and sweet potato fries.
