2 tsp. olive oil
1/2 yellow onion, chopped
8 oz. broccoli, chopped
1/4 cup water
Salt and pepper
1 garlic clove, minced
2 Tbsp. chopped Nature's Promise Organic Basil

Broccoli and Cheddar Casserole

1. Center a rack in oven and heat to 350 degrees. Grease an 8x8" baking dish and set aside.
2. Heat oil in a large nonstick skillet over medium heat until shimmering. Add onion and cook, stirring occasionally, until beginning to soften, 4 to 6 minutes. Add broccoli and water, season with salt and pepper, and cook, stirring frequently, until water has evaporated and broccoli is tender, 5 to 7 minutes. Add garlic and cook, stirring constantly, 30 seconds, then remove from heat and stir in basil. Transfer to a plate and let cool slightly.
3. Whisk eggs, milk, 1/2 teaspoon salt, and 1/2 teaspoon pepper in a large bowl until blended. Add rice, half of cheese, and the broccoli mixture and stir until combined. Transfer to prepared baking dish and spread into an even layer; sprinkle with remaining half of cheese and cover tightly with foil.
4. Bake until casserole is hot throughout, about 30 minutes. Remove foil and continue to bake until cheese is golden brown, about 10 more minutes. Divide among four plates and serve.
