Chicken and Roasted Cauliflower Wraps
Ingredients
1 small head cauliflower, trimmed and broken into bite-size florets
2 tsp. olive oil
Salt and pepper
1 (15-oz.) can Nature's Promise Organic Low Sodium Cannellini Beans, drained
2 Tbsp. Taste of Inspirations Green Goddess Dressing
1 Tbsp. water
2 Tbsp. Taste of Inspirations Garlic & Herb Goat Cheese Log, softened
4 whole-wheat lavash-style wraps
2 cooked boneless, skinless chicken breasts, thinly sliced
1/4 English cucumber, thinly sliced
1/4 cup Hannaford Diced Red Onions
2 cups Hannaford Carrot Chips, for serving

Chicken and Roasted Cauliflower Wraps

directions
1. Heat oven to 425 degrees. On a parchment-lined baking sheet, toss cauliflower with oil and season with salt and pepper. Roast until tender and golden brown, about 30 minutes, stirring halfway through.
2. Meanwhile, mash beans, dressing, and water in a bowl until spreadable and mostly smooth. Stir in goat cheese and season with salt and pepper to taste.
3. Spread bean mixture evenly over half of each lavash wrap. Starting about 2" from edge of lavash, arrange chicken, cauliflower, cucumber, and onions over bean mixture, then wrap lavash tightly. Cut wraps in half and serve with carrots on the side.
