Chicken Mushroom Skillet
Relying on leftover chicken and frozen veggies, this skillet can come together in no time flat. The broth turns into a thicker sauce as it cooks the noodles, leaving you with a delicious meal and minimal cleanup.
2 tsp. vegetable oil
1 cup chopped onion
1 cup sliced mushrooms
2 cups cooked, cubed chicken breast
2 cups frozen peas and carrots
2 cups egg noodles
2 cups low-sodium chicken broth
1/2 tsp. garlic powder
1/4 tsp. thyme
1 bay leaf

1. Heat vegetable oil in large nonstick skillet over medium-high heat. Saute chopped onion and mushrooms until soft (5-6 minutes).
2. Add remaining ingredients and bring to a boil. Lower heat and cover pan. Simmer until noodles are tender (8-10 minutes).
