Chicken, Pepper & Pineapple Kabobs
1 1/2 lbs boneless chicken breast or thighs, cut into 3/4-inch cubes
2 each bell peppers, seeded and cut into 1-inch squares
1 each pineapple, cut into 1-inch cubes
1 each bottle of your favorite satay sauce

You will need 12 - 16 bamboo skewers
1. Soak skewers in water while you are preparing chicken, peppers and pineapple pieces. Skewer chicken, pepper and pineapple pieces onto the skewers.
2. Place on a cookie sheet and brush with marinade. Set in fridge for 15 minutes.
3. Preheat grill. If using broiler, set oven rack about 6 inches from heat element. Grill over medium- low heat 7 - 10 minutes, turning occasionally.
4. Serve with warm coconut rice.
