1. Place a rack in lower-middle of oven and heat to 425 degrees.
2. Combine chicken sausage, spinach, cheese, and roasted red peppers in a large bowl. Combine oil and garlic in a small bowl and set aside.
3. Divide dough into four equal-size balls. Working on a lightly floured surface, roll and flatten each ball into a 6" round. Divide sausage mixture evenly over one side of each round, then fold dough over filling. Crimp edges together with a fork to seal and transfer to a parchment-lined baking sheet. Brush dough tops with garlic oil, then cut three slits in the top of each.
4. Transfer to oven and bake until calzones are golden brown, 15 to 20 minutes. Let cool 5 minutes. Meanwhile, microwave sauce until hot, about 1 minute. Serve with calzones.
