Classic Cheese Blintzes
8 oz. farmer's cheese or ricotta
4 oz. sour cream, plus more for serving
2 Tbsp. maple syrup, plus more for serving
1 large egg yolk
1/2 tsp. lemon zest
6 strawberries, hulled and chopped fine, plus more for serving
8 (9 inch) store-bought crepe wrappers
1/3 cup vegetable oil

Classic Cheese Blintzes

1. Combine farmer's cheese, sour cream, maple syrup, egg yolk, and lemon zest in a medium bowl and stir until smooth and well-combined; gently fold in strawberries. Place 1/4 cup filling in the center of each crepe. Fold bottom of crepe over filling, tuck in sides, and roll into a burrito-like shape.
2. Heat oil in a large skillet over medium heat until shimmering. Working in batches, add blintzes to skillet and fry until golden brown, about 2 minutes per side. Transfer blintzes to a paper-towel-lined baking sheet and repeat with remaining blintzes. Serve with more strawberries, sour cream, and maple syrup.
