4 cups cooked brown rice
2 cups fresh corn kernels (slice raw kernels off 4 ears of corn) or frozen corn kernels
2 cups frozen peas (or mixed vegetables)
1 each small onion, finely chopped
2 cups 2% fat sharp cheddar, shredded
1 1/2 cups Skim milk (fat free)
1/2 teaspoon salt
1 teaspoon chili powder
1/4 teaspoon black pepper
1 teaspoon paprika

1. Preheat oven to 350 degrees. Spray a 2-quart casserole dish with cooking spray.
2. Combine all the ingredients in a bowl and mix well. Spoon mixture into the casserole dish and sprinkle with paprika.
3. Bake for 40 minutes or until hot and edges are slightly crisp.
