This light, simple salad is the perfect accompaniment to any meal or perfect as a simple, standalone meal. Serve with a side of crusty whole-grain bread. Don't be afraid to swap in a different nut. If you can't find hazelnuts, walnuts or pistachios would be equally tasty.
Dressing Ingredients
1/4 c. extra virgin olive oil
3 T. balsamic vinegar
1 t. whole grain mustard
1 t. honey
1/8 t. salt
1/4 t. freshly ground black pepper

1/2 c. red onion, thinly sliced
1/3 c. dried cranberries, juice-sweetened
8 c. baby spinach
2 pears, cored and sliced
2/3 c. hazelnuts, toasted and chopped
