1. Bring a large pot of salted water to a boil and cook gnocchi according to package instructions.
2. Meanwhile, heat oil in a medium nonstick skillet over medium until shimmering. Add broccoli and onion and cook, stirring occasionally, until broccoli is nearly tender, 8 to 10 minutes. Stir in flour and chipotle rub and cook, stirring constantly, 1 minute.
3. Whisk in water and cook until mixture is thickened, about 2 minutes; remove from heat. Fold in gnocchi, chicken, cheese, and sour cream, and season with salt and pepper to taste.
