Creamy Mashed Cauliflower
This variation on mashed potatoes is a great side dish to complement any meal. If you like a little bite to your potatoes, a little horseradish paste is a wonderful addition to garlic for pumping up the spice in this dish.
8 cups cauliflower florets
4 cloves garlic, crushed
1/3 cup nonfat buttermilk
4 tsp. olive oil, divided
1 tsp. butter
1/2 tsp. salt
Pepper to taste
Fresh chives, chopped (optional)

1. Place cauliflower florets and garlic in a steamer basket over boiling water, cover and steam until soft (12-15 minutes).
2. Place the cooked cauliflower and garlic in a food processor. Add buttermilk, 2 teaspoons oil, butter, salt, and pepper. Process until smooth and creamy.
3. Serve drizzled with remaining 2 teaspoons oil and garnish with chives, if desired. Serve hot.
