Ingredients
3 carrots, peeled and shredded coarse (about 2 cups)
1/4 cup raisins
1/4 cup plain Greek yogurt
1/4 cup sliced almonds, toasted
1 tsp. curry powder
Salt and pepper
8 slices sandwich bread
1/4 cup sliced red onion
2 Tbsp. fresh cilantro leaves

directions
1. Stir together carrots, raisins, yogurt, almonds, and curry powder until combined. Season with salt and pepper to taste and spread over 4 bread slices. Add sliced red onion and fresh cilantro leaves; top with 4 more bread slices.
