David Turin's Super Food Salad with Maple Sesame and Ginger Dressing
Ingredients
8 cups salad greens (Any combination of kale, chard, collard greens, spinach, mustard greens or baby bok choy) (salad)
1/2 red onion, sliced (salad)
1 red pepper, sliced (salad)
Cilantro, sprigs (salad)
1 cup walnut pieces or halves (salad)
1 pint blueberries, fresh in season or frozen (salad)
1 log Vermont Creamery goat cheese, crumbled (salad)
1 Tbsp. fresh ginger, peeled and roughly chopped (dressing)
1/2 cup rice wine vinegar (dressing)
2 tsp. Dijon mustard (dressing)
1 Tbsp. fresh squeezed lime juice (dressing)
4 Tbsp. maple syrup (dressing)
1/2 tsp. kosher salt (dressing)
1/2 tsp. black pepper (dressing)
1/4 cup vegetable, canola or 10% olive oil (dressing)
1/2 cup blended sesame oil (or 2 parts pure sesame oil to 1 part vegetable oil) (dressing)

directions
Prepare Salad:
1. Wash, drain and rip greens and combine in a salad serving bowl.
2. Top salad with peppers, onion, walnuts, blueberries, cilantro sprigs and goat cheese.
3. Top with dressing and toss just before serving.
Prepare Dressing:
1. Place ginger, rice wine vinegar, mustard, lime juice, maple syrup, salt and pepper in a blender.
2. With the blender on medium speed, pour the canola oil into the pour hole in a steady stream followed by the sesame oil. Blend until the dressing is totally emulsified and smooth.
