Devilish Drumsticks
Ingredients
A sweet-and-sour glaze gives these drumsticks kid appeal. Serve with a green salad. This recipe also works well with chicken wings. Recipe may be halved or doubled.
6 chicken drumstick (about 2 lbs.)
1 tsp. vegetable oil
1/2 tsp. freshly ground black pepper
1/3 cup maple syrup
1 Tbsp. low-sodium soy sauce
1 Tbsp. rice vinegar

directions
1. Preheat oven to 400 degrees F. Spray a baking sheet with vegetable cooking spray. Rinse chicken and pat dry. In a large bowl toss drumsticks with oil and pepper. Arrange in a single layer on a baking sheet and bake 10 minutes. Turn chicken pieces over, then continue baking until golden brown and almost cooked through, another 10 to 12 minutes. Be sure to wash hands thoroughly after handling the uncooked chicken.
2. In a large skillet over medium heat comb the maple syrup, soy sauce, and vinegar and bring to a boil. If desired, remove skin from drumsticks they cook well with or without. Add drumsticks to the glaze, reduce heat to low, and simmer until sauce chickens, drumsticks are coated with sauce, and almost no sauce remains in the pan 5 to 7 minutes stirring often. Cool 5 minutes and serve, with any remaining sauce on the side.
