Dried Cherry Mostarda
Ingredients
This sweet, tangy, and slightly spicy Italian condiment is traditionally made from fresh, candied, or dried fruit, sugar, and mustard. A natural accompaniment to rich, full-flavored proteins like roast pork or duck, it's also excellent served alongside both hard and soft cheeses.
1 tsp. olive oil
1 shallot, finely chopped
1 cup dried cherries (about 5 oz.)
1/2 cup water
1/4 cup maple syrup
1/4 cup red wine vinegar
2 tsp. ground ginger
2 Tbsp. whole-grain mustard
1 tsp. salt

directions
1. Heat oil in a medium saucepan over medium until shimmering. Add shallot and cook, stirring frequently, until softened but not browned, about 4 minutes.
2. Add cherries, water, maple syrup, vinegar, and ginger and bring to a boil, then reduce heat to medium-low and simmer, stirring occasionally, until cherries are plump and liquid is thickened, 5 to 8 minutes.
3. Remove from heat and stir in mustard and salt. Serve warm or at room temperature.
