1. Place tofu, syrup, vanilla, and cinnamon in a food processor and process untilsmooth. Pulse in 2 tsp. orange zest.
2. Place chocolate in a microwave-safe bowl. Microwave 1 minute and stir. If notfully melted, microwave another 30 to 60 seconds, stirring until smooth and melted.Alternately, melt in the top of a double boiler.
3. Add melted chocolate to tofu in the food processor. Process until completelysmooth, using a spatula to scrape down the sides of the food processor bowl, 1 to2 minutes.
4. Divide mixture among 6 dessert bowls or ramekins. Cover and refrigerate for atleast 1 hour before serving. Garnish with orange zest, if desired.
