French Onion Chicken
Ingredients
This elevated chicken skillet dinner is inspired by French onion soup with sweet, caramelized onions and an extra-melty layer of Swiss cheese to top it off.
1 1/4 lbs. boneless, skinless chicken thighs
3 Tbsp. all-purpose flour
2 Tbsp. vegetable oil, divided
2 medium onions, thinly sliced
1/2 tsp. dried thyme
1 1/4 cups water
1 1/2 tsp. chicken broth base
4 oz. Swiss cheese, grated
1 loaf French bread

directions
Preheat oven to 425 degrees F. Season chicken with salt and pepper. Toss with flour to coat.
Meanwhile, in a 12" oven-safe skillet, heat 1 tablespoon oil over medium-high. Add chicken and cook until browned, 5 minutes per side. Transfer to a plate.
Add remaining 1 tablespoon oil to skillet, along with the onions and thyme. Cook until onions are golden, stirring often, 7 to 8 minutes. Meanwhile, microwave water until very hot. Stir in chicken base until dissolved.
To skillet, stir in the water-chicken base mixture. Return chicken to skillet. Spoon liquid and onions over chicken. Sprinkle cheese on top. Transfer to oven and bake until cheese melts and chicken is cooked through, 15 minutes. Serve with bread.
