Thinly slice ginger. To a medium pot, add ginger, apple cider, water, honey, cinnamon sticks, star anise and cloves.
Heat to a boil on high. Reduce heat to medium-low and simmer 10 minutes, stirring occasionally. Cut oranges into half-moons.
Add half of orange slices to pot. Simmer another 10 minutes, stirring occasionally. Remove from heat and stir in bourbon. Strain mixture and ladle into glasses. Garnish with remaining orange slices.
