Greek-Inspired Chicken Patties with Feta Sauce
Ingredients
1 lb. ground chicken
1 3/4 tsp. dried oregano
1 1/2 tsp. grated lemon zest
1 1/2 tsp. minced garlic
1/4 tsp. kosher salt, or to taste
1/4 tsp. freshly ground black pepper
1/4 tsp. tabasco sauce, or to taste
1/3 cup Taste of Inspirations trademark nonfat Greek Yogurt
1/3 cup Inspirations reduced-fat Feta Cheese, crumbled
2 tsp. fresh lemon juice
1/4 tsp. ground cumin
4 to 6 sprays vegetable oil spray
8 leaves Boston Lettuce, medium
1 large tomato, cored and cut into 8 slices
2 baby seedless cucumbers, ends trimmed and quartered lengthwise
2 Tbsp. fresh chives, finely chopped

Greek-Inspired Chicken Patties with Feta Sauce

Greek-Inspired Chicken Patties with Feta Sauce

directions
1. Preheat grill to medium high. In a large bowl, mix together chicken, oregano, lemon zest, garlic, salt, black pepper, and Tabasco until evenly blended. Form into 4 patties, about 4 inches in diameter and 3/4 inch thick.
2. In a small bowl, mix together yogurt, feta, lemon juice, and cumin until evenly blended, and set aside.
3. Brush hot grill with vegetable oil. Place burgers on grill and cook undisturbed for 4 to 6 minutes until well marked. Spray tops of the burgers with cooking spray and turn. Cook an additional 4 to 6 minutes until cooked through.
4. To serve, place 2 lettuce leaves each on four plates. Top with 2 tomato slices and 2 cucumber spears. Place a burger on each plate, top with 2 generous tablespoons sauce, and sprinkle with chives.
