1. Wash the kale, tear the leaves from the stems and discard the stems. This is a great step for kids to do. Dry thoroughly on kitchen towels or spin well in a salad spinner.
2. Tear the kale leaves into pieces. Arrange kale in a single layer on cookie sheet lined with parchment paper.
3. Spray with olive oil and sprinkle with cumin and salt, or Italian seasoning.
4. Bake for 10 - 20 minutes or until edges are brown and kale is crisp.
